Hash Brown Casserole

15 minutes to prep, 45 minutes to cook: 60 minutes total cook time

Ingredients:

2 pounds frozen hash browns, thawed

½ cup butter, melted

1 can (~10.5 oz) cream of chicken soup

1 pint sour cream

½ cup onion, chopped

2 cups grated cheddar cheese

1 teaspoon salt

½ teaspoon pepper

Instructions:

Preheat oven to 350 degrees F. Spray 11 x 14 inch casserole or baking dish with cooking spray

In large bowl, combine all ingredients and stir together. Spread evenly in prepared pan. Bake for 45 minutes until top is golden brown.

Bacon Green Bean Bundles:

10 minutes to prep, 15 minutes cook time: 25 minutes total cook time

Ingredients:

11/4 lbs green beans (look for thinner green beans or use French green beans (haricot vert)

6 slices bacon cut in half, do not use thick cut bacon

1 teaspoon garlic salt or ½ teaspoon garlic powder

½ teaspoon salt

¼ cup butter melted

2 tablespoons brown sugar

½ teaspoon pepper

1 tablespoon chopped parsley optional

Instructions:

Preheat the oven to 400 degrees. Place the bacon on a sheet pan and bake for 7 minutes. Remove the bacon from the oven.

Trim the ends of the green beans. Bring a pot of salted water to a boil.

Place the green beans in the pot and cook for 2-3 minutes until just tender. Drain and put the green beans in a bowl of ice water to stop the cooking process.

Pat the green beans dry. In a small bowl mix together the garlic salt, butter, brown sugar and pepper. Pour the butter mixture over the green beans and toss to coat.

Wrap 8-10 green beans with a piece of bacon and secure with a toothpick.  Place the green bean bundles on a sheet pan coated with cooking spray.

Bake for 15-20 minutes or until bacon is crispy. Sprinkle with parsley and serve.

Mac & Cheese

20 minutes prep, 30-45 minutes to cook: 50-65 minutes total cook time

Ingredients:

One package of elbow noodles

Melted butter (1 stick)

2 beaten eggs

3/4 cup shredded cheddar cheese

Instructions:

Cook noodles for longer than box directions, about 10-15 minutes, or until soft.

Preheat oven to 350 degrees F. Spray 11 x 14 inch casserole or baking dish with cooking spray.

In large bowl, combine all ingredients and stir together. Spread evenly in prepared pan. Bake for 30-45 minutes until top is golden brown.

Corn Casserole:

10 minutes to prep, 45 minutes to cook: 60 minutes total cook time

Ingredients:

1 can corn drained

1 can cream corn

1 cup sour cream

1 pack jiffy corn muffin mix

½ cup melted butter

1 cup cheese

Instructions:

Preheat oven to 350 degrees F. Spray 11 x 14 inch casserole or baking dish with cooking spray.

In large bowl, combine all ingredients and stir together. Spread evenly in prepared pan. Bake for 45 minutes until top is golden brown.

Sausage Balls:

Bought from Kroger and followed instructions on the back (link).

Turkey Breast:

Bought from Target and followed instructions on bag (link).

Apple Pie:

10 minutes to prep, 30-40 minutes cook time: 40-50 total cook time

Ingredients:

1 box pie crust (Pillsbury red box has 2 pie crusts)- sit out so its easier to mold

3 cans apple pie filling

1 tsp of Cinnamon

Melted butter (1/2 stick)

1/4 tsp of Sugar

Instructions:

Preheat oven to 350 degrees F.

Let the pie crusts sit out for about 10 minutes because it makes it easier to mold.

Place first pie crust and form it to the pie plate.

In a large bowl stir together 3 cans of apple pie filling, cinnamon, and melted butter.

Then place the second pie crust on top and pinch shell around edges so top and bottom crusts are together.

Then slit the pie crust, wet down top crust with water, and add sugar on top.

Bake for 30-40 minutes until top is golden brown.

Additional: Serve with vanilla ice cream
